The old Gambrinus site in Bruges has seen its function change many times—but one thing has always remained: its strong industrial character. Since 2022, Triginta has owned this former brewery, located along one of the city’s busiest access roads. Once it flowed with beer, later with soft drinks. And after that? Silence.

The outline remains, the function shifts. And the future? Still wide open. Housing and care? An office hub? A green urban garden as the beating heart of the site? All possibilities are on the table.

And until that future takes shape, the site is already finding a new rhythm. Kopje Zwam is bringing circular urban farming to life here. Using a basis of coffee grounds, they grow mushrooms and microgreens—waste-free. The leftover substrate becomes compost, and the compost nourishes the next harvest. A perfectly balanced, closed-loop system.
